It was okay...the shallots over powered everything else, but otherwise, it was really pretty.

Fabulous recipe! The ingredients complement each other very well. Easy to make, just a little bit of chopping. Do yourself a favor, and let this sit at least 20 minutes, instead of the reccomended 10.

This is my new favorite salad. If you are thinking about trying this I promise you will love it. I mix everything together then let it sit in the fridge while I finish dinner. Instead of endive, which is never fresh if they even have it at my local market, I mix in a romaine heart right before serving. It has been a hit with my dinner guests every time I have have made it. I will try this with almonds next time to make it even more nutrient dense.

This was absolutely delicious. I'm a beet ***** so I had to make this! I roasted the beets and did not serve it on endive. My mom and 3 year old especially liked it. I added some gorgonzola as well.

Love, and so did everyone else. Even those that never tried beets, thought they didn't like them, and kids who we didn't tell them beets were in it. They all gobbled it up! I did however use 1 large beet instead, but worked out just as good!

Who knew such a simple recipe could turn out to look so fancy and exquisite. Highly recommend it! Tastes excellent on a bed a mixed greens. Used cooked beets, added sliced turnips, and home-made candied walnuts. Loved it.

Served this as a starter to beef short ribs, very pretty on the plate. I used two beets, one didn't seem to add enough color, maybe they were small... I added a bit of blue cheese at the last minute, it was a great addition if you like blue cheese.
