You can create up to five timers

Directions

Boil 6 to 8 beets in salted water until tender, about 35 minutes. Drain and cool slightly, then rub off the skins. Quarter and toss with 2 tablespoons olive oil, and salt and pepper. Serve with Greek yogurt mixed with chopped chives and salt.

    Yes, this is tasty all right. I always boil my beets but would like to try roasting. Roasting veggies is always better than boiling. I love greek yogurt and chives so this was a match made in heaven (sorry Food Network. Beets, Greek yogurt, and chives = Yum!

    I roasted the beats then skinned and sliced them. I served them cold with the chive cream. Yum!
