Yes, this is tasty all right. I always boil my beets but would like to try roasting. Roasting veggies is always better than boiling. I love greek yogurt and chives so this was a match made in heaven (sorry Food Network. Beets, Greek yogurt, and chives = Yum!

I roasted the beats then skinned and sliced them. I served them cold with the chive cream. Yum!

I absolutely LOVE beets, but no one else in the family did. At least until they tried these, even my 2 year old grand daughter loved them. This one is a keeper for sure.

Prepare beets via this method, or if you have more time, wash and wrap tightly in foil and oven roast for 45 minutes or so until tender. After peeling and cutting into about 1/2 inch cubes, and preferably while still warm, toss with olive oil, S & P, and grated lemon or orange zest. Chill thoroughly; serve cold or room temperature with chive yogurt (or choice of fresh herb for dipping and toothpicks. It's amazing how quickly they disappear with comments like "I thought I didn't like beets."
