I made this salad last night using frozen corn, as Jack suggested, if fresh corn wasn't on hand. It came out way too salty (2 t. salt plus the pinch used to smash the garlic. I am assuming that the use of fresh SWEET corn would offset this somewhat, but nevertheless, I think I'll cut it down to 1 teaspoon, total. Completely forget about adding any salt at the end, as suggested - it doesn't need it. Pepper - yes, salt - no. Great salad, even so: bright and colorful - Summer in a bowl. I'll give it 5 stars next time.

This dish is absolutely AMAZING. I grilled 3 ears of corn for the recipe. It made a large bowl and we could have finished it. I had to leave the table to stop eating the salad. I want some for tomorrow! This will be a regular favorite recipe. Can't wait to make it for my friends.

My husband and I have been making this for a couple years now and it is our favorite recipe! The flavors just explode! Great served warm or cold. We have served this so many times and everyone loves it. Sometimes we make this and eat it by itself, as a main dish. I use a tad bit less oil, and more cilantro, but we love cilantro. We've made it so many times, we can make it fast, and from memory.

I have been making this Black Bean Salad for over a year. It is fantastic! I have made it for huge BBQ party's and everyone wants the recipe. I mean everyone! I have played with the recipe too. Try BBQ a few thick slices of pineapple and dicing it up. When you make the dressing, add a tablespoon of honey. This version is served best when cold. Also, I have used canned and fresh corn for the recipe. Both are great. But if you have the time and it's for a group, I would BBQ fresh corn ahead of time. Also, add the avocado at the end! You don't want to over mix and make the avocado sloppy... It's also great for next day left overs. I take it to lunch with diced chicken breast and some leafy greens. HEALTHY and Lite! This is a side dish that you would never know is so good for you.

I was looking for and quick and easy recipe for black beans when I saw the "Black Bean Salad" recipe. It was just what I was looking for as it took just about ten minutes to complete everything as I didn't use fresh corn, but canned corn (which tasted great and I didn't saute the green pepper and onions, but just chopped and dropped them into the salad. It made for a great accompaniment for hamburgers instead of potato salad.

I am slowly learning how to cook. This recipe was extremely easy to make and pretty tasty too. Also, I believe it's quite healthy as everything in it is practically a vegetable. It is also very colorful which is another indicator of healthy recipes. Give this one a shot. I prefer the salad cold and would be a great dish to bring for a summer barbecue.

This was so good! My husband devoured it and he doesn't even like veggies! It was full of flavor and great textures. I only used 1 tablespoon of oil for the dressing, and it turned out perfect.
