So flavorful. The mojo is a MUST. Chose this recipe to use up some canned black beans, so reduced water by over half. Garbanzo beans/ chickpeas would be a great vegetarian alternative to the pork ribs. Forgot the onion and it was still delicious! Huge garlic fan, and this recipe was perfect for that.

Make it into a meal. I omit the rum & use boneless country style pork ribs. After everything is cooked, I remove the bay leaves, garlic head & ribs. I chop the pork meat while removing any fat. I squeeze some the of soft garlic into the mixture & then I use a handheld blender to buzz half of the mixture in the slow cooker. I only like to buzz half because I like the texture. Then I add the meat back in. I top the soup with white rice in the middle & mojo drizzled on top. Please do not skip making the mojo, it's what gives it that extra flavor! Everyone loves this dish.

I'm not the best cook in the world, but I tried this and really didn't like it. I thought I would but it lacked flavor even with the mojo. I lived in Miami for a time and was exposed to some really good black bean soups, so maybe my expectations were a little too high.

Great, easy, slow-cooker soup. I used half as many pork ribs and wish I'd had more. They were delicious. It was a little spicy for my toddler son, but nice and meaty for the adults. I cooked this on low for 8 hours and the dry beans cooked just fine. I also had no trouble with a quick stick blend. Very easy prep - just cut up the onion and chop the head off a garlic clove. My garlic held together nicely without cheesecloth - easy to remove. I liked the mojo, but you really only need a half order - the garlic is a bit strong, but a nice flavor contrast to the soup.

I also did not use rum and this recipe was absolutely delicious! Quick, easy and fairly cheap, I will be making this recipe many more times in the future. Only modifications I made, besides not using rum, was I added a large shallot and I did not cook the garlic in olive oil for the mojo sauce, instead just used chopped garlic in room temp olive oil.

This came out great for me. I didn't use the Rum because I wasn't going to buy a bottle just for an ingredient. I don't think it changed it that much. When we pulled the pork out to remove the bone we found the garlic half and I squeezed that garlic out of its shell right back into the soup. I served this with corn muffins and it is one of the tastiest soups I have ever made.

BTW, the people asking about the recipe being vague about the bay leaves, I was under the impression that you always take them out, that they are inedible.

This soup was excellent. As far the garlic and bay leaves, I just wrapped some cheesecloth around all of it and tied it. Glad I did because some of the garlic cloves separated during cooking. Easy to take the bundle out at the end.

I liked this soup. Made it in the crock pot for ease. Didn't have any ribs, so I used a pork roast bone and some peppered bacon. (It would have benefited from the ribs. The mojo really flavored it up. First big storm of the season, can't wait for lunch :.

i HATE cilantro. hate hate hate it. so instead i used the same amount of thyme and that worked perfectly. i heated up the garlic in the mojo a bit too long, tho, but other than that i love the way its flavors mix with the soup. for the soup i added a carrot because i had one and used beef ribs instead of pork because i forgot which one to buy. i don't regret either of those choices, the soup still tastes amazing. It took me a bit longer to do the pureeing n all that than i would have liked, tho, so it will probably be a while before i make this again. i will definitely make it again, tho.
