I modified this recipe a tiny bit by using vanilla extract and adding sliced bananas that had gotten little too ripe. Worked great with blueberries! On top I sprinkled sliced honey roasted almonds for few final minutes in the oven. My creation got really puffy and blueberries were boiling over at one point, but baking sheet under it prevented messy oven. For a first timer casserole was a HUGE success. Next time I'll try gluten-free bread - this time I used Tuscan loaf from TJ's.

Super easy to put together. I made it with my 3 & 4 year old nephew. They had a blast helping me prep it. Not only did they enjoy making it, they enjoyed eating it. A high compliment as they are both picky eaters.
