Ingredients

  • 1 pound small new potatoes
  • 1 head garlic, halved crosswise
  • 1 bay leaf
  • 1 teaspoon black peppercorns
  • Kosher salt
  • 2 to 4 tablespoons unsalted butter
  • Freshly ground black pepper

Directions

Put the potatoes, garlic, bay leaf, and peppercorns in a large saucepan, add cold water to cover by about an inch and season generously with salt,. Bring to a boil, lower the heat, and simmer until potatoes are fork tender, about 5 to 8 minutes depending on their size.

Drain and discard the garlic, bay leaves, and peppercorns. Halve the potatoes, if large, toss with the butter and season with salt, and pepper, to taste. Keep warm.

    So good!! Only downfall were the peppercorns! I've never used whole ones before. After cooking potatoes I had to dig around and find each hard peppercorn. Next time ill put them in a cheesecloth pouch for easy removal. Otherwise really, really good!

    I found this recipe one day when looking for an alternative to dill seasoned potato recipe. They were a big hit.

    The next time I made them, I knew I'd be pressed for time at dinnertime, so I cut up the potatoes earlier in the afternoon and let them sit in the bay leaf/garlic/salt mixture for a couple of hours before cooking them. The flavors penetrated the potatoes more fully, and wowsers!! DELICIOUS!!

    It was then that I thought these seasoned potatoes would make great mashed potatoes. The next time I made them, I again allowed the potatoes time to soak, then mashed them with a stick of butter and some sour cream. DELICIOUS!!

    This is now my go-to recipe for both boiled and mashed potatoes. I get tons of compliments when I make this recipe.
