Although this is NOT your typical broccoli-cheddar soup (which I'm a HUGE fan of I absolutely loved the flavor and velvety texture that the potatoes bring. I did use both the sweet and russet. The only changes I made were to fry a few strips of bacon for garnish and saute the onions in the bacon drippings instead of using olive oil. I also skipped the celery and added garlic. I did use the sharp cheddar, but I don't find that the flavor really stood out compared to the potatoes. Still very delish and will make it again!

I served this for our Monday Bridge Club ladies and it was greatly enjoyed.
I think some may have a 'blandness' problem due to the stock they use. My homemade stock is very flavorful, so doesn't need much additional salt & pepper; but, a cheap stock in the box defitinetly would need some help. Taste as you go. Season as you like.

This is an easy and delicious main dish soup. I added thyme and tarragon with the bay leaf, and increased the cheese to about 1/2 pound. Warning: if made ahead, do not add broccoli until just before serving. It keeps well in a crock pot for a pot luck. To make it vegetarian, substitute vegetable broth for the chicken broth. Serve crumbled bacon, grated cheese, and croutons as optional toppings

This soup wasn't terrible, but maybe it should have been called something else. It was too sweet, likely from the sweet potatoes. Maybe next time I would just use all white potatoes. The cheese flavor was lost entirely. I had to add a lot of things to make this soup better. A lot more salt and pepper, to take away from the sweetness. I also added extra cheese, sour cream, and chorizo. I added the chorizo to give it a salty element to take away from the sweetness. Also when I served it I topped it with more cheese and some chipotle tabasco. That made it really good.

Thank God for your reviews! Because of reading them first, this soup came out awesome!! Hearing the original recipe was bland, I added 3 cloves of garlic, some red pepper flakes and
scallions (had them on hand, along with fresh herbs and I put some broccoli into the blender to puree with the other stuff. Also, only cooked broccoli for a minute in microwave before adding to the soup!! Wow.....what a thick, delicious soup it was!!! My kids already asked me to make it again and to double the recipe!!!

Terrific winter soup - but a better name for the dish would be Potato-Cheddar Soup. It's just not the traditional Broccoli Cheddar soup that I was expecting, and there was a lot more than 4 portions. It was yummy, but not as marketed.

It was tasty, but the recipe was not for 4 people, unless they were linebackers. It can easily feed 10.

This is the first time I made something from Food Network that I have not given at least 4 stars.
