    This is a winner. I cooked 4 Louisiana Hot Links, cut them up and added them into the mix right before the rice and it really gave the dish a nice kick. I also added one tablespoon of Emeril's Essence in addition to the two tablespoons of Cajun seasoning since some previous reviewers said the dish was too bland. Finally, I didn't have fresh parsley but I did have some cilantro and the substitution tasted great!

    Don't forget the lemons! They really add to the flavor. My family LOVED this and I will make it again for sure.

    My family loved loved loved this one!!! It really wasn't too spicy. (for us anyway... My 3 year old had his eaten before I ha a chance to sit down myself! My 4 year old loved it too. My husband wants this as a regular staple. Once a week or so. All around terrific dish. Quick, easy, and gone, gone gone... I keep forgetting to serve the lemon on the side. I bet it would go great,but not necessary... Used cilantro instead of parsley, nice and fresh!

    My fiance and I thought that this recipe was pretty darn good. I just made it a few days ago and we're already planning to make it again this week! I made a couple of substitutions: Brown rice instead of white, parsley flakes instead of fresh parsley, and green onion instead of scallions (and less than the recipe called for since im not big on onions. I also did not mix the rice with the rest of the dish. In our house its just our preference to keep the rice (or in other cases pasta separate. The only complaint was that it could stand to be a little spicier so i'll add more seasoning next time. I'll also need to double the recipe because it didn't last very long at all.

    I was slightly disappointed in this recipe...it was too bland for my palate. I added a couple more tomatoes as well as some other ingredients. Next time I will add an onion, I will flavor the rice while cooking, maybe in some chicken or shrimp stock...perhaps a little soy sauce for depth.

    Fantastic, and super easy. I was a little worried cause my husband doesn't really like cooked tomatoes in dishes, but the tomatoes brought in a very nice flavor. I added eggs to up-protein the dish, which also worked well. Will be putting it into my dinner rotation.

    My family loved this! This recipe was easy to follow, you cannot mess this up. I used generic cajun seasoning and found the heat to be perfect for my taste. Will make again

    I don't ever write reviews, but this was fantastic. I actually added more Cajun because I like things spicy and used half the rice just because that's what I had. Next time I will try it with all the rice.....definitely do the parsley and lemon - finishes off the dish nicely.

    This is SO easy and fast, provided you have cooked rice. Excellent as is but there's lots of room for your choice of veggies/chicken/pork/herbs...a great BASIC recipe, then let your imagination go!

    This recipe was AMAZING. By far, the best dinner I have cooked. I felt I need a little more greenery, so I added frozen broccoli & fresh okra. A great way to sneak in veggies! One of the BEST FN recipes I've ever tried. Lovelovelove it!!!

    I'm the only one in my family who likes shrimp, so I made this instead with some grilled chicken. It was wonderful. It was a very light taste initially but then there was a bit of a kick. It was a nice healthy meal that both of my kids ate happily and it was was easy to make.
