8 small apples, such as, Granny Smith or macoun

2 cups light brown sugar

1 cup maple syrup

1/3 cup light corn syrup

1/2 cup heavy cream

4 tablespoons unsalted butter

Toppings of choice, optional, recipes follow

Remove the stems from the apples and scrub them under warm water and dry them. Insert a chopstick through the top of the apple all the way to the top and line a baking sheet with waxed paper, set aside.

Put the sugar, maple syrup, corn syrup, and cream in a saucepan. Bring to a boil over medium-high heat and cook, swirling the pan but not stirring, until the mixture reaches 250 degrees F (firm ball stage) on a candy thermometer. Pull pan from the heat and stir in the butter. Tilt the saucepan and dip and spin each apple into the caramel, covering about 3/4 of the apple. Place on the prepared baking sheet until set.

If using a topping spread the topping out on a sheet pan or wax paper and immediately roll the caramel coated apples in the topping. Transfer to the prepared baking sheet until set.

Topping 1:

2 cups chocolate wafers, graham crackers, or vanilla wafers

Put the wafers or cracker of choice in a plastic storage bag and smash until coarse.

Topping 2:

2 cups walnuts or pecans, toasted

1/3 cup dried cranberries

1 tablespoon finely chopped crystallized ginger

Preheat the oven to 350 degrees F.

Spread the nuts on a baking sheet and toast until fragrant and brown, about 8 minutes. Pulse the nuts, cranberries, and ginger in a food processor until mixture resembles very coarse sand.

    I used to work at a candy shop where they made homemmade caramel apples and these are easier and just as yummy. Those people... having problems getting the caramel to stick may have not scrubbed the apples well enough. The growers sometimes put a waxy film on them to kepp them fresher longer. Another problem may be that the caramel is too hot, let it cool for a few minutes and then try again. Overall this recipe was good. My kids enjoyed it too!Read more

    Too eliminate having the caramel slip from the apple, try washing the apple with hot water or dipping it into hot water. Dry... the apple and see if this doesn't eliminate the slipping caramel problem.Read more

    OK, bought oragnic, unwaxed apples. Washed, dried, etc. Caramel still slid off. My kids thought the flavor was "ok" but... not like they are used to. I ended up putting these in the fridge untill they set, and then I reformed the caramel up and around the apple. Not pretty but at least it worked. Caramel was really sticky. Would definetely recommend spraying the wax paper with cooking spray before placing apples on them. Got some paper stickage when I tried to pull them off. Still looking for the way to make the caramel stay put. Anyone know how Rocky Mountain Chocolate Company does it??? Their apples are the best we've had.Read more

    Yes this recipe does take some patience because the carmamel has to be EXACTLY 250 degrees. Everyone who said they used a... thermometer and it didn't go well obviously did something wrong. When my mom and i were making these delicious snacks it was perfect. We dipped it once waited then dipped agian. So people who were complaining that it slide right off probably did it too soon. So listen to me and make them. Halloween is right around the corner!!Read more

    Dump, swirl, dip--what could be easier? I used the nut/ginger/cranberry topping and a vanilla cookie topping and people liked... both. In fact, one person wants me to give him a quote for making a few dozen of them for a camp-related event. Until I made the recipes from this episode, caramel had never turned out "right" for me. The mixed-nut brittle and the caramel apple recipes are a godsend.Read more
