Directions

Toss 7 cups small cauliflower florets and 3 chopped plum tomatoes with 1/4 cup olive oil, 2 cloves minced garlic, 1 1/2 teaspoons cumin seeds, 1/4 teaspoon turmeric, a pinch of cayenne, 1/2 teaspoon salt, and pepper to taste on a baking sheet. Roast in a 450 degrees F oven, about 25 minutes. Sprinkle with lemon juice and chopped cilantro.

    Not sure what happened but 25 minutes in a 450 degree oven absolutely incinerated the cauliflower. I will try this again at a lower cooking temperature.

    I made this last night and thought it was a unique way to serve cauliflower. I liked the spices called for and will definitely make it again, probably adding peppers too.

    Oh my goodness,
    THis is such a simple and delicious recipe. I could eat this at breakfast, lunch or dinner. Can't wait t try it after it's been in the fridge overnight. I have a feeling this will be as amazing cold as it is just coming out of the oven! Thanks so much for sharing this recipe.
