    Loved these green beans! Made them with vege burgers. They were a nice substitute for french fries - crunchy and satisfying. Wish we would have made more.

    these are so yumry. of course, i like it better without all the excessive musteard & taragoon. it will be a hit at my next 6th grade poutluck party. thanks!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!

    I love veggies roasted this way. Try a sprinkling of parm. reggiano on the asparagus prior to roasting. Yum!

    I don't think I've ever tasted any vegetable as good as this! It's so easy to make, too. Great for family or a dinner party.

    I've beeen roasting my green beans this way for years, only without the mustard & tarragon, but will try it that way now. If the green beans are fresh I add water, but if I use a bag of frozen whole green beans (no need to defrost firstI don't use the extra water. I toss the beans in EVOO with some Kosher salt, fresh pepper and lots of smashed garlic. Then I spread on a shallow roasting pan (careful to keep them in a single layer or they'll steam instead of roastingand cook until they have a nice char. ALL vegees benefit from the roasting method - try it with peeled, whole asparagus, it's to die for!
