Directions
Mix 2 cups cooked rice, 1/2 cup sour cream, 1 cup chopped scallions, a 4-ounce can chopped green chiles (drained), 1 cup shredded cheddar, and salt and cayenne to taste. Butter a casserole dish and sprinkle with parmesan. Spread the rice mixture in the dish, sprinkle with more parmesan and dot with butter. Bake 20 minutes at 450 degrees.

this was EXCELLENT and so easy. i did not dot with butter since it was already pretty rich sounding and i baked at a lower temp (350 to keep the cheese from browning. the flavors all worked together so well...loved the green onion flavor with the other ingredients--very complimentary. i have added this to my favorites! :

WOW what a quick easy recipe. Using your leftover rice and a few ingrediants you can make a totally super new side dish. Thought it was going to be dry - but it wasn't. Will also be a great dish to take to potluck dinners. Thanks.

Try Italian Cream Cheese in place of the Sour cream.Then,Beware tinned Green Chilis can be Hot.Taste prior to rinsing and putting All in and feel ruined the Dish.
