    So simple and yet so tasty!! Changed two things and it still turned out wonderfully. One was I used more rice- about 3-4 cups total, minimum for my rice cooker. Two was I omitted the cayenne as I didn't have any on hand. Makes a wonderful side dish to tacos, but would also be great as a stand alone dish. Enjoy!

    Talk about food orgasm! Love this recipe. It's very easy to make and very little prepping involved.
    I used about a teaspoon of cayenne and turned out quite spicy, which I really liked.
    I added 2 handfuls of chopped cilantro and sprinkled some more once the dish was baked.

    My boyfriend went back for seconds! Orzo was much cheaper than rice today, and I cooked & shredded 3 chicken thighs, and served it with 3 more thighs that were still whole. I would, in retrospect, serve it with sausage, and only add chicken to the casserole, or vice-versa, for variety. It was so super yummy though! Besides the addition of shredded chicken, I added a little bit of soy sauce, italian dressing and flour to the sauce created from cooking the chicken.

    I love it!!! Really easy, tasty, and affordable. I add corn into the mixture as well as either andouille sausage or chicken in the mixture and serve with warm tortillas. Oh also extra chedder on top makes it bubble up nicely.

    I love it already and it hasn't even finished baking. Had to try it ahead of time. I love the scallions in the dish, gives it great flavor!

    THIS RECIPE WAS VERY TASTY...BE CAREFUL WITH THE CAYENNE PEPPER....A GOOD PINCH WAS ENOUGH FOR ME, I DID USE HOT DRAINED CHILES THOUGH : I WILL MAKE THIS AGAIN, THE SCALLIONS GAVE THIS A NICE TOUCH....THANKS

    My husband doesn't like onions so I left out the scallions out and instead of cheddar cheese I used colby monterey jack. The chiles add a great flavor to this dish-not too strong-just right. Very easy and very good. (I have even used instant rice in a pinch when I didn't have time to cook regular rice and it was still good

    My husband took one bite of the rice and asked if there was more. We have three small boys (7, 3, and 14mo. and besides the baby they were fighting over who git the last spoonful. Will definately make this again, but will DOUBLE the recipe next time!

    This tastes like you really worked hard, yet it is oh so easy. I like things on the spicy side so I used the cayenne liberally. The parmesan on the top really makes a nice crispy topping. The family just loved it!
