I loved this recipe and would definitely make these again. I didn't have any problem with a runny batter. I made this recipe directly out of the magazine. Is it possible that the web recipe and the magazine recipe were a little bit different? I also agree with an earlier reviewer about the brand of creamed corn. I used Santium brand purchased at Fred Meyer (Kroger. It was very thick. I would also add some heat to this recipe when I make it again. I like things spicy!

Wow, you know , I read the terrible reviews and was like ,,,these people probably just aren't following the recipe right, as I am an avid cook and really really wanted this recipe to work for me, Definite fail! This recipe does not work , I think all the 5 star posts must be from food network employees paid to rate and give good reviews , this recipe should come off the site , Like all the other bad reviews , the batter was runny and made flat little cheese cookies, luckily I added some red peppers and chives to them so they were at least very tasty cheese corn cookies but definitely not puffs as the recipe suggests. oh and I signed up just to review this recipe because I was so disappointed with it .

argh, wish i had read the reviews, would not have even bothered. my concerns began almost immediately when i added the flour to the hot corn mixture...it just formed a stiff ball, and didn't pull away from the sides of the pan as described in the recipe or as in a normal gougeres recipe. the eggs did not incorporate at all, so used a hand mixer... i considered cutting my losses at this point, but went ahead and chilled the dough and proceeded. the result were heavy, ugly blobs which became less and less forgiving the cooler they became. blech! i'm a pretty experienced home cook, so i'm blaming the recipe-not myself!

I followed the recipe to a T. the 'batter" was like a thin soup. The "puffs" were flat & tasteless. Huge disappointment.

I made these for a party and they turned out great, everyone loved them. I made too many apps as usual but these were all eaten. I wonder if the problem with texture could be the brand of creamed corn people are using? Mine were fine and I followed the recipe exactly. I don't know where the extra moisture could be coming from. Anyway, I'm going to make them again and add more cheese this time.
Someone mentioned that these are not light and airy, that is true. Gougeres that I've made have been a little heavy, they're not like puff pastry at all. But these little gut bombs are delicious!

I wish I had read the reviews before making this recipe. I followed the directions exactly and was left with a runny batter that made flat, pancake like little pools. And like one other rater said, the taste was a bit flat too. I have made the french recipe for gougeres from Martha Stewart's appetizer book and they were perfect. This recipe has some serious problems.

I also had very thin batter after following the instructions precisely. I'm pretty sure that the problem is too many eggs. The batter was nice and thick out of the pot, but once I started adding the eggs it became very thin very fast. I was really disappointed in this recipe. I'm not even going to bother making it again.

I'm not sure why others are having a problem with thin dough either. Mine was very thick. I added regular cheddar cheese and probably used a little more than 1/2 a cup, maybe 3/4 a cup. I also decided to spice them up a little bit and added 1/2 a pound of cooked sausage (Jimmy Dean, plain, in the roll, garlic powder and salt and pepper. They were amazing and everyone at my party really liked them. I've already had a request for the recipe and to make them again! Also, to the person who asked about making it ahead, I made the dough in the morning, probably around 9 am and baked them around 5:30 that night. They were perfect! Also, I had some dough left over and made them the next night. Still perfect!
