Great recipe, the combination of different types of ginger was fabulous. I combined Sugar in the Raw with yellow sugar crystals to roll them in - turned out very lovely.

Fantastic cookie. Not too sweet with a nice ginger taste. Love the balance between the molasses and ginger flavors, and the crystallized ginger really makes them special -- used a little more than called for when I made the 2nd batch. Will definitely make again... and again... and again!

Delicious. The crystalized ginger adds the chew. These cookies were easy and melt in your mouth. Also it did not require refrigeration which is common when making a gingerbread dough.

AMAZING cookies!!!! We just made a batch of these and they are fantastic. Crunchy outside but soft gingerbread inside. Wonderful flavors. My husband hates gingerbread but he has grabbed 2 of them already. My daughter and her boyfriend helped me make these and they are taking half home with them, along with the recipe. KEEPER!!!!!

I made these today, and they are great: not too sweet, great ginger-molasses flavor, crispy around the edges and soft in the middle. I made them as written except I used a bit more than a quarter cup of crystallized ginger. They baked in the time indicated and turned out perfectly.
