I made these last night, and like many of the reviewers, I used a box cake mix (devils food w/about a cup of mini choc. chips added and a different frosting recipe that turns out very much like whipped cream. I dyed the frosting green (not sure why it is blue in the recipe; are the chicks supposed to be up in the sky?? and rolled them in the tinted coconut, then fastened the decorations on with small amounts of frosting, which acts like a glue. Thanks to Debbie for the suggestion of putting the water & food coloring in a resealable bag before adding the coconut; that worked beautifully! And thanks also to Michelle for suggesting the marshmallow fondant for the egg shells. Wow! It's super easy to make & work with (I used the Wilton recipe found on their website. I was able to find Air Heads candy at the grocery store. I thought it would be in a package by itself, but it turned out the white was part of a 6-flavor combo box. I was better able to shape & cut the candy by putting it between 2 pieces of parchment paper & alternately microwaving it for approx.10 seconds, then rolling it out with the rolling pin (again, between the parchment paper, otherwise it will stick to your rolling pin! until it was thin & pliable enough. Then I cut out egg shapes with an egg cookie cutter & used a knife to cut the eggs in half w/the jagged edges. However, the marshmallow fondant was ultimately much prettier and better-tasting, so that's what I went with. I also used both the mini Robin eggs (malted milk choc. and Brach's speckled jelly bean eggs, which have such pretty pastel colors.

These turned out quite well, but Sarah's point on needing a very big food processor is a good one. If you use a normal (medium size, it will overflow. I softened the butter, which made it easier to blend the mix for the cupcakes. As for the frosting, I halved the recipe and found the frosting pretty tough to make. I put the sugar/fluff mixture in the oven to get it to blend more smoothly before adding the milk. It came out good, but is not, in my opinion, any better than a traditional vanilla frosting.

This recipe turned out very delicious, but I had a few issues with the recipe itself. Firstly, it did not specify whether the butter should be cold or softened. Mine was softened and it never quite blended smooth in the food processor. This brings me to my next beef... they don't mention that you need an ENORMOUS food processor for this recipe! I ended up having to transfer the liquid into a bowl before adding the flours or my food processor would have overflowed! I then used a regular hand mixer, and was never quite able to get it as liquidy as pancake batter. I really wish I had just done in the stand mixer as I originally intended. Lastly, in the coconut grass instructions, it says to add "a few" tablespoons of water to make it easier for the colour to spread. I used 3 tbsp. (which to me was the lesser of "a few" and it was very wet and took 25 minutes in the oven to dry well. All that said, they turned out very yummy and were a hit! Everyone thought they were really cute and delicious! (I should mention, however, I didn't use the frosting recipe here, but instead a similar frosting I had leftover from a cake I had made the previous day.

Everyone LOVED these cupcakes! I changed what you do to the top a little though-not all of us like coconut, so I used our favorite frosting mix and dyed it green, then used a pastry bag and frosting tip that would give me a grass look. I sitll did the peeps, but I couldn't get the candy to make the shell, so we had to skip that. I also used whatever egg shaped candies were on hand (which were chocolate.
All in all, great recipe to do-follow it if you can (and don't have picky eaters, or else amend if needed--EVERYONE will still love it.

I used a boxed cupcake mix as well (Red Velvet, but I used the frosting and decorations and they were a big hit! I did not use the airheads for the shell and they're still pretty cute. The frosting recipe was a little more involved than it had to be. I just mixed the butter and sugar until well blended that added the other ingrediants and it turned out fine. Hint: Frost the cupcake and the roll the sides in the coconut so that the Peep and the eggs adhere to the frosting in the middle.

I thought that the cupcake itself turned out amazing, but next time I will use a different frosting. I thought the fluff frosting was WAY too sweet, (just my opinion. I also had to make them without the airheads candy, but I think they turned out very cute for an Easter holiday treat!!!!!

good recipe. I agree that the white air heads are hard to find so i just used all the different colors ( pinks blues greens and whites they looked like died easter eggs. also i used some peep rabbits to mix it up some with eggs and some like they were coming out off the ground. also I cut the coconut and frosting recipes in half and had plenty for 24 cupcakes. also if you split the malted milk eggs in half they dont over crowd the front

So I have to admit that I used a box cake mix to make the cupcakes but the decorations are what everyone loves the most! I do agree that the airheads were difficult to cut. I used scissors and i had to throw a couple away because they kept cracking so I'd suggest buying extra. They also were that easy to find, I luckily a new candy store in town just opened up. Hope you guys enjoy yours!

This recipe was great and a huge hit. Everybody i served them to thought they were adorable! But i had to make them airhead eggshell-less. Can anybody give me advice on how they made the eggshell? I couldn't cut it, i even tried melting them slightly, but I still couldn't cut it to make an eggshell shape.
