I definitely agree with other posters that this is not exactly a "quick and easy" recipe. Making the actual sauce takes up a bit of time, but I followed the recipe almost exactly as it is and it came out great. I did make a few tweaks - I used rotisserie chicken which I love doing whenever I can. It cuts down on the prep time and I personally think the chicken is more flavorful. I also threw in some green onions with the chicken filling and placed the sliced red onion rings on top of the dish with the cheese before putting it into the broiler for the second time. I cut up an entire rotisserie chicken and it ended up making 10 enchiladas which provided dinner for me and my boyfriend for a whole week. I was skeptical about the tomatillo sauce because I sometimes find it too sweet for my liking, but I thought this sauce really complimented the dish. I am definitely adding this to my recipe box and making it again in the future!

Not sure it's worth all the work. The list of ingredients are many and some expensive. Takes too long. Flavor good but again, cost and time make this recipe a 3

This dinner was simple and delicious. I love the idea of using a rotisserie chicken to save time. The cilantro and feta cheese really adds to the flavor.

Made it for the first time to bring over to my friend whom just delivered her 2nd baby & it was just fabulous. Didn't take too much prep time, was easy to transport, looked colorful & was very tasty!

Cooked or roasted chicken may be spiced a bit for more flavor. For convenience, one may add salsa fresca or canned chili sauce. Adding scallions to the chicken mixture, cumin or oregano helps. Also to reduce the salt, I would use less processed cheese.

FOR THE ONES COMPLAINING ABOUT THE SUGAR, IT TAKES A PINCH...., ONLY A PINCH. NOT TO SWEETEN THE TOMATO SC. BUT TO ENHANCE. I HAVE A MUCH BETTER RECIPE, USING PULLED ROAST MEAT. AND YOU DON'T HAVE TO POUR SAUCE OVER THE ENCHILADA. MY RECIPE IS MORE CHEDDAR OVER. AND JUST BAKE. MY GIRLFRIEND'S HUSBAND GARY IS A WONDERFUL COOK, AND CAME UP WITH A RECIPE TO DIIE FOR. LEAVING THIS ONE IN THE DIRT.. I GIVE THIS 4 STARS AS IT WOULD BE TASTY FOR THOSE WHO LIKE ALL THE SAUCE, BUT TOO MUCH WORK AND TOO MANY INGREDI ENTS FOR SO SIMPLE A MEAL...........
