this was very easy to make and pretty fast. the blend of the fennel with the sun dried tomatoes and the olives was absolutely wonderful. it is definately somthing you could make for dinner for guest. the chicken thigh were so cheap and usually i like white meat but this was delicious .

Tyler is the king of pan roasted chicken. This dish was fantastically delicious even though I forgot the oregano! I also had to use the dry sundried tomatoes that I reconsitituted in water which I then used for the couscous. I also added a bit of wine to the pan at the end to make a fantastic sauce for the chicken and veggies. Yum!
