Due to having a horrible cold, I was craving some of my mother's chicken soup. I decided there was no better time than the present to learn how to make my own. I selected this recipe, due to the number of positive comments and the overall "excellent" rating. I bought a freshly, roasted chicken from my local grocery store and, since my mom's chicken soup has tomatoes in it, I decided to add two 14 oz. cans of petite diced tomatoes with sweet onion to this recipe. It was AWESOME and just the thing I needed for my nasty cold. Thank you Food Network!!!! As I type this review, I'm enjoying the leftover soup.... I'm feeling much better today! ;-

This was a super easy soup to make, especially since I am down with the flu. I roasted my chicken breast in the oven first before shredding, and then added all the vegetables into the pot. The only thing I omitted was the thyme, but the soup was so flavorful already that I didn't miss it. Will definitely use this recipe again when I'm craving chicken noodle soup!

The kids and I really enjoyed this. It's a good, chunky, flavorful soup. The only thing I did differently, is instead of using shredded chicken, I chopped it into little pieces. That was mostly so my 1 year old could eat it really easily. :

I followed the directions and made the chicken stock (didn't buy pre-made stuff or a use a rotisserrie chicken and used fresh herbs and veggies, nothing dried and the result was nothing short of the best chicken noodle soup I've ever had. I made it because my friend was sick and homemade chicken noodle soup always made me feel better, however this kicked the old chicken soup recipe's butt! From now on when I'm sick and ask my mom to make me some homemade chicken soup and bring it over, I'll forward this recipe to her.

I spooned off the excess grease while I cooked the stock (that helps for those that said the soup was too greasy or oily. I actually used the carrots and celery from the stock in the soup itself since I like them more mushy in soup than crunchy. I did add a bit of crushed red pepper for a little heat, but besides these few changes I did exactly as Tyler's directions said to. If you're looking for ridiculously FANTASTIC chicken noodle soup, look no further, go out and buy the ingredients, follow the directions and within 2 hrs. you'll be happy you did!

This was great. Very healthy comfort food. I used half an onion instead of a whole. It was plenty. 7 sprigs of thyme for extra flavor and Wha La.Yummy and fast!

MMmm comfort food. Pretty easy as long as you plan ahead. Even yummy after having been frozen for a month! I did discover that I probably should've used fresh thyme (like the recipe said instead of dried, as the dried was just too powerful.
