I made this tonight and I liked it. I will make it again. Though,I did have a few issues. For one, the recipe calls for too much mozzarella...next time I'll use about half. Also, I found the breading got really soggy...next time I'll cook it with less sauce. Finally, as many other reviewers have said, the quantities of the ingredients are outta whack.

I absolutely loved the chicken! It was juicy and yummy! It was also very filling. I made the recommended amount and was able to feed six adults and my dog who couldn't help but steal one off the stove. But who could blame him? I wasn't crazy about the marinara sauce the first time so the second time I used my own recipe. I'll post it so you can try it too. It's very delicious and when I make it for my family, it is always gone in ten minutes!
1 small white onion
2 - 3 cloves of garlic
1/2 a cup of sliced mushrooms (your choice as to what kind
1 can of tomato sauce
1 small can of tomato paste
1 can of diced onions
1 tbsp of oregano
1 tbsp thyme
1 tbsp of cumin (gives it a slightly smoky flavor
2 tbsp of E.V.O.O. (extra virgin olive oil
and
2 tbsp of honey
Heat E.V.O.O. in a medium saucepan. Saute onions and garlic until onions are translucent. Add in mushrooms and cook for two or three more minutes. Then add the diced tomatos, tomato sauce, and paste. Stir in honey and seasonings. Salt and pepper to taste. When it starts to bubble, reduce heat, cover, and stir occasionally.
It is very scrumptious and compliments this dish perfectly!

I made it. It was simply amazingly good. When people moan when they eat your food, you know it's good. This one is a crowd pleaser for sure. The ingredients are simple but the combination of these ingredients surprisingly gave your tastebuds a very pleasurable sensation. I used 1 tsp each of basil and oregano in the marinara. I took 5 large boneless/skinless chicken breasts and cut them into 10 fillets before pounding and seasoning the fillets before dredging in the flour, egg & milk (slighty salted, and Italian breadcrumbs. The chicken was so tender and juicy. I used fresh mozzarella and cut fresh thin slices using my grater and grated fresh parmasan regianno cheese.
I was singing in Italian because I felt like I was making real Italian cuisine. Our family loves all things Italian. My sister-in-law is Italian, my brother lives in Reggio near theParma region where they make the cheese. Do I have something for them the next time they are here.
Thanks for this, it is now a staple in this home. I will make this forever.

I used Italian bread crumbs and Emeril's Marinara sauce. This recipe is even better than one's I've had at restaurants!

very good recipe, but, as mentioned, the crumbs and egg proportions are off. also the sauce, it says it yields 3 cups - so i bought triple the ingredients (to make 9, so i could get 7 ended up with WAY more than expected, but it is a good sauce. Also it calls for "oregano seasonings" and in the recipe it says use "Italian seasonings", i use Italian and it tasted great. I also cooked spaghetti noodles to use up the sauce, and that tasted great also

Use your common sense when measuring out stuff like the bread crumbs because what the recipe calls for is outrageous, and baking in the oven only took me about 20 minutes (10 less than what the recipe called for. The sauce was a little too chunky for me, but that could just be a personal preference thing. When making this take into account that the estimated time this recipe is supposed to take does not include the time it will take to make the pasta even though pasta is shown in the picture. The meal turned out great with some adjustments; however, just following the recipe would have made it just average.

The measurements were off for the eggs and bread but overall this was a great recipe. I loved it because it was very easy to make. Great recipe minimal effort!!!

First off I think they have the measurements way off!! 2 pounds of chicken do not use all of those eggs and bread crumbs--what a waste. The quick marinara sauce was terrible and that could be why this just wasn't good. A lot of work for nothing!
