    My husband and I loved it!! It was a quick fix and a light alternative to some of our dinner plans. The only thing that I did differently was instead of spreading the Baba Ghanoush on the bottom of the pita - I mixed it together with the chicken salad in a small bowl and then put it all on the pita with the lettuce. Absolutely great!!

    It is so simple and quick to make. It is a perfect dinner if your on the on the run. I will definitely make it again and again and again. Try it!

    Can I just say that this is one of my favorite recipes?? Im the type of person where I get cravings for something, make it, and then Im bored with it for awhile.
    I ate this 3 lunches in a row.
    Although I must admit that that I never used Baba Ghanoush (couldnt find in the store that day, I used traditional hummus. I loved it so much that I used roasted garlic hummus the next time I made it and even better!
    I even sent my fiance to work with it (seperate ziplocs that were easily assembled in a flash and he couldnt stop raving.
    Do yourself and your body a favor and make this. Oh, and the only change I would even consider making is to sprinkle some feta on top. (its yummy, too

    i made this about 3 weeks ago because i was bored and wanted to do something delicious with my chicken. I'd never cooked with baba ghanoush before so I went for this recipe. it was INSANE... So good, fresh and simple. the only thing that requires any thinking was cutting the veggies. I cant recommend this more. one of my faves, i was wary because of the source and that there were only 4 reviews, but im so happy i made it. the leftovers were even better. id double the recipe, i made it for my roommates [3 of us] and i think there was only enough leftover for 2 other pitas.

    nothing more to say.... soooo good. go make it now.

    This is so easy and so good I could eat it every day. I did marinate it overnight so the chicken really picked up the herb flavors. I had just a few kalamata olives that I added to the salad mix...can't wait to make it again

    As a Food Network addict, I am even more addicted to the Food Network Magazine, in which I discovered this wonderful and unique recipe. Made it as the recipe called for, and though you could incorporate other ingredients, why bother? This was an absolute explosion of wonderful tastes. Healthy, delicious, unexpected. I cannot wait to share this recipe with my friends.

    I made this for dinner (the third recipe from weeknight cooking section in food network magazine I've tried this week! and it was fantastic! I stayed true to the recipe and it needed nothing! I bet you could sub prepared hummus if you couldn't find the eggplant.
