I'm not interested in 'foolishness' in my chicken salad. That said, this is an excellent basic recipe. If nuts, apples, and grapes are your thing, please feel free to get creative, but if you just want something to eat with leftover chicken, this is a great go to.
I used roasted chicken. Added sweet relish, didn't have any dill and used dry parsley. I'm sure fresh herbs would be great but I was very pleased with my results.

I made this for Father's Day lunch today, and it was a huge hit with my family. Few minor adjustments: I roasted the chicken instead of poaching it (I just prefer it that way, I used both tarragon and dill because I had it in the garden, and I added a teaspoon of honey to the mayo mixture. It was too tart for me before the honey - adding that made it perfect. I also left it in the fridge overnight and the flavors really melded together perfectly. GREAT recipe!

My Dad is 70 years old, and he says this is the best chicken salad he's ever had in his entire life! It's truly delicious, especially with the subtle hint of lemon. It's much lighter than most overly-heavy chicken salads.
Most people who cook realize that you can always add more of something, but you can't take it out if you added too much. For those complaining about the salt level, either just don't add it, or add it a little at a time. This is too good a recipe to toss out for something that you have complete control over!

Seriously, this is inedible - I questioned the two teaspoons of salt but went ahead with it - and it's the only flavor you can taste. I can't believe this got a 5 star rating overall - the rest of the recipe sounds great, but cut the salt by at least 3/4. I'm throwing it out

Had left over fried chicken from last nights dinner and needed to use it up and since I love chicken salad made this receipe and it is really great. My husband really liked it and he isn't much for chicken salad but really likes this one. A recipe we will be using over again.

I used thigh meat (it was on sale and the chicken salad turned out great! I made chicken salad crostinis for my husband and he was very impressed with my cooking, therefore, I am very impressed with this recipe!

Chicken was so moist and my picky son-in-law loved it. I added more celery since I had it and used a vidalia onion. So good.

I made this and couldn't believe how good it was. The tarragon and the lemon juice really make it taste very light - not heavy like a lot of chicken salads can taste.

Great chicken salad recipe! I used left over garlic/herb roasted chicken. Didn't have any dill so used diced dill pickles.
