I tried this out as something different to put in my boyfriend's lunches for work. I was worried because he isn't a huge fan of mustard even though this recipe doesn't call for too much. Let me just say he loves it. With or with out lettuce and tomato it was definitely a keeper. It was super easy to make and something to break up the normal lunch meat routine!

Excellent. I subbed-in sprouts for the lettuce (cause I love them. Big hit at an in-service in school, too! I like to try recipes from my I pad first, this one is getting printed for what my family calls 'the book'. Thanks!

Congratulations, Hunter! This is FANTASTIC! I actually made this for dinner tonight, since I needed something light and easy. My goodness - I could eat this for every meal. The only thing I added was a bit of chile powder, since we like the little bite that it adds.
And to the individual that gave three stars - "What's the difference between this and most chicken salad sandwiches again. Besides a famous guy's son made it?" - you must have a weak palate, because not all dishes are created equal.
But, if you think an awesome chicken salad is so easy then let's see a better one from you. Go ahead - post it and I promise I'll try it. If you have nothing to contribute, then I'm going to go ahead and assume that Hunter's recipe would have whipped your sour-pus behind.

This is very tasty and easy to prepare....I already had all the ingredients except red onion. I swapped some mild organic yellow onion and it was still great. It has a nice texture from the carrots/celery. I made sure I chopped them into pretty small pieces so no one would get too big of a chunk when biting into the sandwich. I am a teacher and this is a great pack up for the first couple of days back to school! I will be making it again. Way to go Hunter :

We love this recipe. It's my husband's favorite chicken salad by far. We try to have a batch in the fridge every week. Great as a snack with crackers or on a sandwich. WAY TO GO.
