This was a super easy week night dinner. I added about 1/4 cup white wine to the sauce and used just a little less parsley. I tossed this sauce on 1/2 a package cooked whole wheat angel hair pasta and topped it with the sliced chicken. I served asparagus on the side. Very tasty! I would serve this to company or as a regular family meal.

I served this dish to a group of friends who are notoriously picky eaters. They took one look at the sauce (which is very thick, almost like a paste and it became obvious that they were terrified. One brave bite later, they were all asking for more of "the green stuff."
This is one of my favorite recipes I've found on FN and I make it at least once a month. It's easy, tasty and appears much more complicated a dish when presented than it is to make.

For someone that's not an advanced cook, this recipe sure let me fool some people. Family and friends LOVED it! Follow the recipe, it's perfect and not overpowered by either the mint or parsley. Went well with rice and a good white wine.

The sauce is too thick and looks like a pesto. I personnaly hated this recipe, but my boyfriend tought it was ok.

This is an awesome recipie. The sauce makes the whole dish. Puts a punch of flavor in your mouth. Very tasty.

I mix the sauce with an immersion blender, then add to the pan to heat and cook a little after removing the cooked chicken. If the chicken is cooked to the proper temp and the sauce ingredients follow the recipe, you can't go wrong. I usually make roasted garlic potatoes with this and the sauce is also delicious over the potatoes. My husband usually hates lemon anything and this is his favorite chicken dish. Somehow the ingredients balance to create a sauce that is cohesive and not overwhelming in one particular flavor. So, please, don't bread the chicken (yuck, don't leave out the mint and don't expect to eat "just" the chicken with only salt and pepper, don't leave out salt (check the taste as you go! the chicken is meant to be eaten with the sauce (it's not paste! and it is delicious. My family which includes two teenagers, ask for this all the time.

my brother recently made this recipe for us this wknd and OMG was it sooo yummy! he made a lot and thank goodness because we couldn't stop eating it! soooo bursting w/flavor and i love the "sauce" probably the best chicken i have had in a long time!
