    Me & my husband just LOVED it. It's quick, easy, healthy, & so pretty when you pour the sauce over the chicken. It's perfectly cooked at 165 degrees. I was leary of putting in mint, but it did not overpower the dish at all. You must put it in. It's what gives the dish it freshness.

    I made this for the first time a few days ago and my daughter has asked for it every night since. Even my 13 month old loved it! Will decrease the amount of oil in the sauce next time...

    This was a diffrent way to have chicken. My 8 and 6 year old boys liked the lemon herb sauce very much. I would not add so much salt to the chicken next time but other than that it was great. I also forgot to buy fresh thyme so I used dried and it turned out very good.

    I actually took a chance and cooked this recipe (first time for a birthday party. I left out the mint and I used 20 lbs of chicken breast, cutting each in manageable sizes. Since the party was a buffet and outside, I decided to pour the sauce over the chicken prior to serving and garnished with slices of chicken. It made a pretty presentation and was a big hit with the guest. I'm having left overs tonight!

    I enjoyed this simple chicken recipe and made it in under 1 hour (the sauce can be made in a minute. I left out the mint and used only a handful of parsely. The lemon rind definitely adds flavor. I used chicken thighs and I recommend breading the chicken and cooking it on in the oil first for 2-3 min and then cooking it in the oven as recommended. Of course, using a meat thermometer leads to perfectly cooked chicken.
