    I have to say, it was the best Casserole I've ever made. I never had polenta before, and I'm glad I did. I didn't know it was basically Italian grits. I will try to switch it up a bit. I think next time I'll use left over spaghetti sauce, almost like a lasagna, replace corn with Spinach or Broccoli.

    Loved it. Knew I would with the ingredients involved. Had never actually had polenta and went to 3 different grocery stores before finding it, but awesome!!

    Just got done eating this for supper. Delish! Will definitely make this again. Everyone likes it and it is really easy. I used a bag of frozen corn, it's what I had. I also used sun dried tomato and garlic polenta that I made. They both worked great.

    My husband loves to make chili this time of year on Sunday afternoon to go with his football games. This is the perfect Monday night dinner to use up the leftover chili. Easy and yummy.

    We used fresh Jersey corn and scallions from our backyard. This was a really tasty dish!!! There are so many ways you could mess with it too... like to add jalapenos and top with a dollop of sour cream or make it a 100% vegetarian dinner. Usually I would pair cornbread with chili. This time the polenta was a nice surprise and it absorbs all the yummy flavors of the cheese, scallion, chili and corn.
    It's a great quick dinner, perfect for any weeknight.

    Loved the idea of this! I had to modify the recipe quite a bit based on what I had on hand (my goal was "what supper can I make without making a trip to the grocery store?". I did have leftover Texas chili (yummy!, but no corn (fresh, frozen or canned . . . I know!? What's up with that? so I decided to use a can of chickpeas instead. Also, no polenta . . . but the other reviewer's idea of using cornbread was brilliant! I just dolloped the batter right on the casserole in place of the polenta . . . took a little longer baking, but the end result was tasty! Next time I'll use corn, but the chickpeas were not bad at all.
