People look at these and think they are brownies. When you explain what they really are, they just disappear. They are wonderful! So creamy and delicious. Almost mousse-like.

Chocolate lovers dream - Rich, creamy, layers of textures & intense flavor. The crust is made with "Famous Chocolate Wafers" by Nabisco (found by ice cream toppings at Harris Teeter & Food Lion or with cookies at Fresh Market. They are very thin, dark, and larger diameter than nilla wafers. I substituted expresso powder for ground coffee. I agree with others that a variety of toppings could be used in place of crushed candy canes. I crushed the candy canes very finely & sprinkled near the center of each square, dipped knife in hot water to cut neatly. The hardest part is waiting for them to chill overnight!

I unfortunately didn't read the reviews before making this cookie, so I also had a hard time cutting them. Next time, I will either just drizzle chocolate on top after cutting or use a warm knife. I used mint Oreo cookies for the crust...filling and all. This gave a little extra mint flavor. I didn't use much candy cane on top.

The previous reviewer who suggested using the Keebler pre-made chocolate pie crust from the tin, instead of the chocolate wafers, was spot on. I also switched out the candy canes for toasted almond slivers. My husband doesn't normally like chocolate or cheesecake, but he raved about this.

This recipe was great and I would definitely try it again except for the candy canes.We didn't eat much of this due to the candy but my husband and I agreed it will be much better plain.

Everyone loved this. My sister who doesn't eat sugar had to make an exception. Its easy but looks difficult. The filling is creamy and sweet but the sour cream cuts the sweetness and adds a subtle undertone. The crust is sweet and salty -- the tastes are complex but harmonize perfectly. However, we are all chocolate lovers and do not feel peppermint belongs in our chocolate. So I used crushed toasted almonds instead. That provided just the right crunchiness to set off all that creamy chocolaty heaven. Easy with a food processor. NOTE: the hot knife trick was a great tip. I cut these into 24 squares. Next time I'm going to have to double the recipe. People wanted more.

I made these for our annual candy/dessert making for Christmas and this was the hit of the season. I've read some of the other comments and many people were having trouble finding the chocolate wafers. I bought an oreo ready made pie crust and took it out of the pieshell, broke it up with a fork and used it as the 20 chocolate wafers. Followed the rest of the directions exactly and the bottom crust turned out fantastic. Hope this helps.

It is a great recipr, but for those of you confused about the wafer cookies look for the Keebler cookies that are chocolate, strawberry, and vanilla. Once described like this you probably understand what they are now. The trick is finding a package that is all chocolate. Try looking at a Hispanic themed grocery store. These wafer cookies seem to be very popular in the Hispanic culture and you can find full packs of the individual flavors.
I realized it when I went on a vacation to Mexico and saw these wafer cookies in just about every store. In Arizona, Food City carries packs of just chocolate. You could probably find them at the Ranch Market stores also. For those of you without a heavy concentration of hispanics with a grocery store that caters to that culture you will probably be able to be the multiflavor packs from Keebler and just use the chocolate variety for the recipe.

This is not only tasty but such a pretty, festive presentation! Very easy and fun to make. Use a warmed knife to cut, I had no problems cutting but noticed others did!
