I made these for Valentines day - used half semi-sweet and half milk chocolate, turned out very good!

Suggestions: 1 I highly recommend scooping the white chocolate into a zip lock bag - will come out very nicely! A fork will not produce the same results.
2 Once the strawberries are on the parchment paper, leave them in the fridge for about 30 min or so, otherwise when you try and remove them shortly after half the chocolate will stay on the paper

Fantastic!!! Really phenomenal recipe! Used Vahlrona chocolate and organic juicy strawberries. Skipped the white chocolate. Microwaved choc at 50% power for 1 minute then 1 minute. INCREDIBLE! Best ever chocolate-covered strawberries I've ever had, and I have them every chance I get!!!

This recipe really should not be considered intermediate. Putting the chocolate into the microwave is not necessary. Just watch your chocolate at all times and make sure no water escapes inside the bowl. Pay especially close attention to your white chocolate! It could dry out! When in doubt, just put in on your double boiller for a few seconds, remove it, stir and repeat until it is melted.
For a glossy finish to your coating, add a touch of vegetable oil to the melted chocolate and stir.

I made these for a dinner party of 8 including me, the womenfolk especially loved them! The other guy and I were left to pick the crumbs lol. I made it with a hand-whipped cream infused w/liqueur and a little bit of vanilla that gave it an extra great taste. I really love the crunch the chocolate has over the strawberry when refrigerated, too. I made most of them as recommended and a few white chocolate with regular chocolate drizzle to change it up, much success. I blogged about it and got some really good photos on my blog that's listed in my about me if interested further.
