I made this recipe exactly as stated and it turned out delicious! Some people thought it would've been a little better if the espresso was decreased to 1 or even 1/2 tsp instead of the 2 because it did create a somewhat bitter flavor, but I personally thought it enhanced the chocolate. Will definitely make again!

I agree with all............this was truly delicious! The only change I made was to use Famous chocolate cookie crumbs I had on hand - very similar in taste to chocolate grahams though. I would dare anyone to detect this is a healthier version cheesecake. Sometimes you get skeptical about doing a reconstructed/healthy version of a recipe because you do all the work/expense and it lets you down. However, that is not the case with this one. My hubby is a cheesecake guy and he LOVED this version.....good thing since this will be my new chocolate cheesecake recipe going forward.Those FNK chefs are the best!

This cheesecake is amazing! I made this for my husband for Valentine's Day and it is definitely the best chocolate cheesecake I have ever made. The texture was so smooth and creamy, just like the inside of a chocolate truffle candy.
I chose not to add the espresso, just to have a pure chocolate taste. I also added 1 more tablespoon of butter for the crust because it was too dry and didn't seem to hold together well.

I made this cheesecake for 5 families (not including my own for this last Christmas. I'd never made a cheesecake before, never tried this one before, but decided I'd do it anyway and hope for the best. I followed the recipe to a "T". Because I live in a higher elevation, I had to let it cook for about another 10 minutes and the crust stay in the freezer for an additional 15 minutes (It was fine at the instructed time but held up slightly better the longer it sat in there. The results:
3 of the families said it was the best cheesecake they'd ever had
1 family said it was amazing (especially w/whipped cream and berries
All 5 said they want me to make it again for them next year and 1 wants it for her birthday in a few weeks.
My family LOVES it so much that I've made it 2x's since Christmas and am about to start on #3.
It's incredibly easy and fast to make compared to other cheesecakes and tastes just as good

not as rich as a regular cheesecake but for a low fat version this was good. I used Nilla wafers in my crust since thats what I had on hand.

I made this on Christmas Eve, and enjoyed after my feast on Christmas day....so so good..very rich but fantastic, can't believe it's made with cottage cheese...
I mixed mine up in my Vitamix, came out so smooth. Very easy to do, will definately be making this again and again....yummy...

Made it today, I think it's easy, didn't use too many bowls so not much cleaning after, that's what i prefer.
It is pretty good, not too sweet, good overall.
Maybe I'll make it again.

I made this recently to bring to a dinner party---I was a little afraid that it wouldn't be chocolately enough, but it was excellent! I will be making this again soon.
