  • Blend 1/3 cup feta, 2 tablespoons olive oil, 1 tablespoon each lemon juice, water and dill, 1 small grated garlic clove, and salt and pepper to taste in a mini food processor. Toss with 1 chopped romaine heart, 1 small chopped cucumber, 5 chopped radishes, 1 drained can chickpeas, 2 chopped celery stalks, and 1/3 cup each thawed frozen peas and toasted sliced almonds. Season with salt and pepper.

This is a delicious and easy salad to make.  The dressing is really what brings it all together and adds the flavor.  I used extra garlic and a bit more feta to the dressing as I really like the tangy cheese flavor.  Add a bit more olive oil & water if dressing seems too thick.  You can even toss in a few grape tomato halves for added color.  This went over very well with my guests.  If taking to a picnic or party, toss in the dressing just before serving or the salad could get soggy.  It's not so great as a leftover so plan your portion sizes so that it's all consumed when it's served.  item not reviewed by moderator and published

This was very good and the dressing is wonderful. I thought that it was too thick so I added about 2 T more olive oil. I also added one tomato chopped to it. We had an impromptu dinner with our neighbors and they both commented on it. The husband said it was the best dressing he had ever tasted. Will definitely make it again for company. Loved the almonds and peas in it.The only other change was that I only used two radishes. item not reviewed by moderator and published
