I use the Joy of Cooking Christmas Recipe for these and they are terrific- people love them - chewy and meringue-y but surprising. I admit, I did not try this recipe - but after the first person's review, I would urge her to try the other recipe, because these cookies are special! I am a pretty good baker, too, and while they are a bit sticky --so use more powdered sugar-- they shouldn't be much more trouble than any cookie you have to roll and cut. In my experience, the dough doesn't get tough if you re-roll, and keep adding more pwd sugar.

PLEASE LOOK AT THE VIDEO BEFORE MAKING THIS COOKIE. THE POWDER SUGAR INGREDIENTS ARE STATED WRONG. THE RECIPE IS FOR 2 1/4 CUPS CONFECTIONERS SUGAR, BUT IN THE RECIPE INSTRUCTIONS IT SAYS "PUT 1/2 CUP OF THE SIFTED CONFECTIONERS SUGAR - SHOULD BE 2 1/4. AND THE REMAINING SUGAR OF 1 3/4 CUPS ADDED TO THE BEATEN EGG WHITES. PLEASE SOMEONE EDIT THIS INFORMATION.

These are a nightmare to make. The "dough" is like sticky epoxy glue. I spent a lot of time chilling and rolling to no avail and finally sent it all down the disposer.
It sounded different, and it sure was! Not something I would try again, and I consider myself an expert baker.
