Directions

Drizzle 2 sheets of foil with olive oil; sprinkle each with 1/4 cup sliced almonds and 3/4 teaspoon crushed coriander seeds. Brush four 6-ounce trout fillets with more olive oil; season with salt and pepper. Place each fillet, skin-side down, on top of the nuts. Top with a few orange slices (leave the peel on), then add another fillet, skin-side up, to form a trout sandwich. Sprinkle with more almonds and coriander seeds. Fold up the foil sheets and grill over high heat until the fish is just cooked through and the almonds are toasted, 8 to 10 minutes. Carefully loosen the almond crust from the bottom of the foil with a spatula.

I used steelhead trout for this recipe which I had never tried before. It was quite tasty. The family thought it was a little bland but I actually liked the tasting the flavor of the fish and not a bunch of other junk. Also, 10 min was not a long enough cook time, the trout was still raw in the middle. We ended up cooking it 20 minutes and it was perfect.

I cooked this dish with tilapia instead of trout, and poured some white wine (Chardonnay in the pouches (I couldn?t find trout in our country.
...It was awesome! and everyone in my family adored it.

I first closed the foil too much, I think. The fish did not cook well. I put it back in with the foil curled up but not sealed at the top. Then, I baked it at 450 for 8 minutes. It was quite good! I will make this again.
