Wow -very impressed! This was delicious - and I am not an expert steak cooker either. I also used a bunch of scallions instead of the leek (faster and cheaper. I only cooked mine 5 min per side as well. There was a lot of juice in the plate as it rested and that made me nervous, but the steak was delicious and tender. Will put in the files to keep!

Happily impressed with this dish. We used scallions instead of leeks cause it was cheaper, but that gravy...oh my god!! To die for. Will make this dish again in a heartbeat!

I used 1/2 bundle scallions instead of a leek since I had them on hand. I was also making this for two, so next time I will reduce the gravy recipe to 1/4, double the flour, and use 1/2lb steak. Steaks should be a medium rare when they come out of the pan. The time/heat in the recipe yielded well done steaks. I will have to reduce the time and/or heat next time : It was absolutely delicious though!!!

This was fantastic! I followed the recipe as directed except for using green onions instead of leaks (cheaper and half-and-half instead of heavy cream (tad bit healthier, although kind of like having a diet coke with an ice cream sundae. The gravy made me swoon. Our steaks took way less than 8 minutes per side, more like 4-5. My only issue is that my husband, who does not like gravy and is lactose intolerant to boot, said they tasted "burnt," although my kids did not complain. Maybe I will grill next time instead of searing. Did anyone else encounter that problem?

the gravy was just fine. super in fact. i added a tsp of corn starch at the end to thicken it up a bit. my steaks were different cuts but treated them the same. cooked on the grill and were very happy

Good recipe. I used smaller strips than the recipe calls for - .5 pound, 3/4 thick so I only cooked it for 4-5 minutes per side which ended up being enough. The gravy overpowered the taste of the rub, in fact I am planning on using a different rub next time I make this while keeping the gravy. The taste of the gravy was excellent, although like other reviewers I found that it was a tad thin. I served this with diced grilled potatoes and fruit.

Made this last night for my fiance and our roommate. Very tasty! Leeks were too expensive so i used shallots for gravy. All the other comments were great! I only used 2 cups chicken stock instead of 3. Perfect amount!
