Yum! I made this recipe for Christmas dinner and it was delicious and easy to do. I did increase the amount of stuffing, and made the extra in a separate dish.

Ifound the apples and cornbread made the stuffing a bit too sweet, but still tasty. I cooked the 6 hens I made for the 80 minutes called for but they were a bit over done at 400 degrees. Leeks are really expensive where I live. I had to buy two very large ones for $4.00 a lb. And then I only used an inch and a half of one of them. I will need to research recipes using leeks here to use them up. Would onions work just as well?

Maybe I did something wrong, but the stuffing was so wet. The birds cooked great though, the skin was nice and crunchy.

I first made this last year for a holiday party, and they came out so great that I did a repeat this year! They are so cute, and friends really enjoy them since they are kind of a novelty thing. The second time I made these, they produced a lot of juice, so i may cook them on a rack so that the liquid can pool in the pan beneath instead of boiling around the bottom half of the birds. Another small change that I may make next time is to infuse the basting butter with some extra sage, because I don't think you get a lot of the sage flavor in the stuffing.

I've made these several times and they are excellent! Plan on serving them for Thanksgiving this year and will make extra stuffing minus the onions/leeks for a few family members who can't have onions. The little hens look so pretty on the plate and a half is just the right amount with a side dish or two.

This was the first time I've cooked with cornish game hens and the first time I've made stuffing. Both turned out delicious!

I made this recipe with 6 hens for a dinner last night. The stuffing was delicious and moist. for 6 hens I did increase the apples to 2 and added a bit more cornbread but then I ended up baking the extra in another dish anyway.
With 6 hens the cooking time was about 1 hour and 15 minutes.
I will definitely use this recipe again.

I had 4 cornish game hens and thought the stuffing was just right. The cavity is very small, so I had just the right amount of stuffing for each hen. We loved the stuffing, it's definately worth making again!
