    i only used 2 cornish game hens with this recipie and the amount of stuffing was perfect for the two. i suggest if you are using 4 hens, double the stuffing recipie.
    i thought the flavor and texture of the stuffing was amazing. i have never eaten an apple stuffing before and am greatly pleased with how it turned out.
    everybody should try this at least once!

    I made this recipe over the weekend to family. Just wanted something different since we will all be eating turkey soon. It was a big hit! It looked beautiful, was juicy, tasty, and carved nicely (spit in half. The stuffing remained intact. I added an egg to the stuffing - just makes it hold together better and makes it more souffle-like. I agree that an additional apple would have been better. I also brushed with olive oil instead of butter.

    These hens were wonderful, I served them for a Halloween Dinner party this weekend. A big hit - especially the apple cornbread stuffing. I would next time use more apples.

    Only trouble was, the butter on the hens smoked the entire cooking time, making for a rather intersting start of the evening when the guests arrived, wish I knew a way to prevent this from happnening again!

    This was a fabulous recipe that I served to company. I added pecans to the stuffing and used green onions instead of leeks. Everyone was impressed!
