I did this recipe with turkey sausage, green apples and walnuts instead of the cranberries, apricot and currants and it was excellent.

I have been making this recipe for a few years. It's fabulous every time and every time I make it for company, my guests ALL request the recipe. In making the wid rice, I like to add more cranberries and apricots for color and taste.

This recipe was a big hit at my Thanksgiving meal. I served this instead of Turkey. It was moist and delicious with a nice fruity after taste from the stuffing.

This recipe was so easy and that rice is so good that I make it now as a side dish w/ other entre's! The family really loves it and the kids actually ask for "That Rocki' Rice you make , mom!"

I changed things a bit and used dired cherried instead of currants. I used this in my Thanksgiving turkey and it was yummy. My family is filled with great cooks and everyone asked for the recipe.
