EXCELLENT AND EASY! I have always made my own couscous salad from no particular recipe, adding whatever veggies I have on hand and ad libbing the dressing. But I recently picked up a ready-made couscous salad with mint and tomatoes at Costco one day when I was in a hurry. It was SO good that I wanted to find a similar recipe to work from. Today, I found this recipe and it is every bit as good as the salad from Costco. I ad libbed a bit, leaving out the cucumbers (my husband hates cukes and adding some finely-diced carrots. Also, the Costco salad uses pearl (larger couscous, which I prefer and which requires only slightly longer to cook. This is a delicious recipe that would be a great addition to any summer picnic or pot luck.

A friend made this for me and served it with grilled chicken and grilled vegetables. I filled my large grilled bell pepper pieces with this couscous salad and enjoyed it very much. It also stands just fine on its own.

This is my favorite couscous salad. Mint and pinenuts are great flavor enhancer.
