    This soup was incredible! Cranberry beans are also known as Roman Beans, shell beans or borlotti beans. I used all the tomatoes in the can of San Marzano tomatoes and I add cubed pepperoni. As the beans broke down the soup became thick. I cooked my pasta separate so I wouldn't have mushy shells in the leftover soup I plan to take for several lunches in the very near future! Yum!!

    This recipe is totally lacking in flavor- I think there is a misprint on the volume of water. ( I make scratch soups all the time - 3 quarts of water does not make 4-6 servings- I should have known better. I used top quality dried cranberry beans, pancetta and fresh herbs. Note that the "rave" reviews all significantly altered the recipe ( substituted broth, etc. Could be a good starting point but do not expect this recipe to work as written. I'm adding significantly more herbs, garlic, etc now trying to rescue this.

    The key here are both the Bortotti Beans (Cranberry Beans and the San Marzanno Tomatoes! if you don't like Rosemary use fresh Chopped or torn Basil (tear it over the pot to be sure to capture each drop. The Kale is a wonderful addition. I know I will be making this and "recreating" this forever! I omitted the pancetta since I wanted an "all veggie" version this time. I also used Locatelli Romano Cheese instead of Parmesiano since it has a sharper taste (versus sweet with Parmesiano and stands up to the wonderful bitterness of the kale. Enjoy!

    I found this recipe on a healthy food blog. Same one. I however made mine different as some ingredients were not at hand. I added 1 large can of Hunts crushed tomato used 6 cups of water, 1/2 tsp of dried rosemary ( did not have fresh , added 2 Italian Sausage links sliced thin and browned. We did not add the parsley used 1/4 tsp salt and no pepper. We used 3 cans of dark kidney beans per the other sites recipe. We had no pancetta so we cut up 3 slices of bacon and put that in the soup and left it in. Talk about an amazing soup. Comfort food! And I am accustomed to eating really good tasting food too! This will be a winner in our house and on our weekly rotation. My daughter kept going back for more.

    Delicious - Would recommend a little jazzing up with spicy sausage and maybe some pesto/cheese filled tortellini. Also, I didn't use rosemary but used dried basil and Lots of oregano instead.

    I made this recipe for my family and they loved it! I also made a few changes cause I couldn't find all the ingredients. I added canned kidney beans instead of the cranberry beans, added some italian chicken sausage, added more pancetta and left it in the soup. I also added grated parmesan cheese on top of each bowl. Everyone loved it. My dad said that he'd never tasted a soup as good in any restaurant. They now ask for it all the time!

    This was deicious. I made quite a few changes though. I uses 2 slices of crispy bacon broken up into pieces instead of pancetta. I left the bacon in the soup. I also used one container of chicken stock and one extra can of chicken broth instead of using water. This will give the soup much more flavor than water. It was impossible to find cranberry beans so I used one can on navy beans and one can of pinto. Since the beans were canned I found the soup did not need to cook for the two hours. I aso added extra tomatoes and juice (maybe 5 -7 extra tomatoes. One cup to one and a half cups pasta was plenty and thickened the soup when added. The kale and the parm cheese made it even tastier. Serve it with some crusty bread. My husband said it was the best pasta fagioli he has ever had.

    great pasta fagioli recipe. here's how to make it much better. don't need all the olive oil. add carrots. 3 cloves garlic. big onion. more pancetta, keep it in the soup. more tomatoes, with juice. use white beans. use chicken broth instead of water. don't add too much salt, already salty with pancetta.
