I have made this twice in one week!
Both results were flavorful, rich and satisfying.
The first time I added cooked brown rice and pureed the entire soup
to get a smoother consistency.
The second time I sauteed 1 pound of portabello mushrooms with the carrots, celery, and onions. I added 1 Cup each of cooked frozen peas, frozen corn, frozen green beans, and potatoes, cut to smaller size as necessary.
For both times I omitted the salt, used low-sodium chicken broth, and non-fat half and half. I substituted 1/2 teaspoon white black pepper and 1 teaspoon ground thyme instead of the spice bundle and I substituted white wine for the sherry.
I like the idea of adding egg noodles and think the sherry would definately enhance it, I just happened to be out of it.

I modified this recipe to a cream of Turkey. I used the left over turkey from Thanksgiving and added chopped mushrooms to the soup. It gave the soup a different feel, but still a wonderful comfort food. Great after spending a day outside in the fall or winter

I have never made this soup without sending the recipe home with EVERYONE. It truly is the best cream of chicken soup ever. And just as good, if not better, the next day. You can reduce the amount of kosher salt to 1/2 tablespoon, if using a store-bought cooked rotisserie chicken as I do. So, so GOOD!

I made this soup last night for my family - and we all thought it was the best chicken noodle soup we've ever had! I usually use a different recipe for this soup - but there isn't much flavor to it. So I decided to give this one a try and IT IS AMAZING. My children love pasta so I also added ditalini pasta to the soup! I threw out my old recipe and will only make this soup from now on!! I had my sister and her husband, and also my parents, over for dinner last night to have this - and they both took home the recipe!!
YOU HAVE TO TRY THIS!!!!
