I used the bacon I had on hand and this was a big hit....my daughter who likes peas loved it and hubby who does NOT like peas even found it palatable. I used locally made bacon that is pretty heavily smoked.....so that probably added some flavor it where others complained it was pretty bland.

I made a batch for the troops and everyone enjoyed it to the hilt.
I will keep this one on file.

I added sliced shallot to the pancetta mixture. It was delicious and not a bean was left on the platter at Easter dinner. A crowd pleaser indeed!

This dish is so tasty and easy to make. Unfortunately sugar snap peas are not in season here in Australia and I was unable to locate them frozen, so I used extra snow peas. Due to the lack of sugar snap peas, there was a bit too much sauce, but it was delicious nonetheless. I had to thicken the sauce a little with cornflour, as it was a bit on the loose side.

Followed recipe - it definately needs some "doctoring up". Used bacon. Only had springs peas & sugar peas which I sliced very thin. Added lemon pepper & a pinch of gourmet garden salt mixture. Only 1/2 lemon and that was almost too much. Took to potluck and it went over very well. I will use recipe again. JRP in AZ

The first time I made this it was just OK, but was rather bland, and missing something. The second time, I sauteed 2 shallots in the bacon grease and added a pinch of crushed red pepper flakes, plus the zest of 1 lemon. MUCH BETTER! Now I have been asked for the recipe twice. Thanks for the basics. Everyone loves the variety of peas, and it has the kick it needed.

I made the recipe exactly as described and it was very bland. Others at the table were trying to bump it up with salt & pepper but it didn't improve much. Needs some sort of spice kick in it and some other texture.

My family found this rich and delicious. we did use regular bacon so perhaps that did add the extra flavor. It was creamy and crispy at the same time and that is a hard combination to achieve. We will use this recipe again. It did serve seven people with lots of left overs.

I was expecting much more flavor in this dish. It was very bland. The pancetta, although not lean, did not leave behind much in the way of drippings. Perhaps this dish would have been more flavorful had I used regular bacon. I love peas, especially sugar snaps, but this recipe did not flatter them. This dish did not disappear from the Easter buffet. I will not make this again.

Was bit skeptical..but these were very good. Its a creamy and rich dish..so if you are serving other stuff with it...you won't need that much per person. I used 2 10oz bags of frozen peas..and it was way to much food for 9 people. Very tasty though..and not all that hard.
