This was great! I put some goat cheese on top as well, and it tasted a little better. the only thing is, that it's a lot of time, and not extremely hearty or satisfying. Good for a party, where you can just leave them in the oven and forget about it while taking care of the other cooking, but not worth it if you just want something to munch on at home.

I made these for a party recently and they were fantastic. I served them on homemade french baguettes and added a little more garlic. I also used roma tomatoes that were fairly big, so I cut them in thirds which worked well. I would definitely recommend these for any appetizer or party because of their simplicty and eye appeal.

This was so easy and fabulous. I also spread some sun-dried tomato goat cheese on the bread. The flavor just explodes in your mouth. This will become a standard recipe for me.

Served them at my Christmas Party and barely had a chance to try it myself! They were that good. Wish I made more.

I make this all the time. The tomatoes are sweet, juicy, and delectable with just a hint of chewiness (I usually have to make extra because my boyfriend and I eat the roasted tomatoes like candy. The bread is easy to burn so I watch it pretty closely. The only way this tastes better is to spread some warm goat cheese on top before adding the tomato.
