    I loved it. Believe it or not. I didn't have any chunky apple sauce so I substituted crushed pineapple. The recipe didn't seem to mind. I skipped the sweet potatoe chips at the end (too much work. I just added those ingredients to the soup. Also, I did about 1 inch of ginger because I like things hot, and I served the soup with a dabble of sour cream.

    This was a very easy soup to make. I had to make some changes as I did not have any applesauce or apples so I roasted some sweet peppers (5 small and added them instead. It added a nice flavor. I still used the apple cider vinegar in the curry butter which gave it just the right tang. Highly recomend it!!

    This is soooo good! My changes - used all broth instead of half water; used an apple instead of applesauce. Love how curry fills the air! Yum!

    The soup was delicious. I made my own applesauce for the recipe. Also, I used coconut butter/oil instead of butter. I will be making this again.

    I really enjoyed this recipe, especially the baked crisps on top. They provide a nice contrast in texture. Just be sure not to add the part left over from the grated ginger! I made that mistake and ended up with a lot of little strings in the soup. Only use the pulp!

    made this with the girlfriend last night and she hasn't stopped talking about it. we're thinking for next time we might add some jalapenos in with the onions for some more kick. we also had some goat cheese left over from another receipe and added it in the bowl before eating and I'm glad we did. the sweet potato chips were easy and tastey but I got in trouble for eating almost all of them before she got to add em to the soup.

    This soup is really good, and no one has mentioned how healthy it is. I ended up making some changes - actually forgot to put in one of the sweet potatoes, but since I thought I had I already added some extra broth and applesauce (smooth, couldn't find unsweetened chunky. Total 2 cans chicken broth and 2 cups applesauce. I ran out of curry powder, so I made a substitute with 1/2 tsp turmeric, 1 tsp ground cumin powder, 1/2 tsp ground coriander powder, and 1/2 tsp. red chili powder. I liked the flavor so much I will use this again instead of regular curry. Did not do the chips or "butter" but did top with cilantro. Really enjoyed the result! I might throw that extra sweet potato in next time though. ROUND TWO: tried the exact same recipe with roasted butternut squash instead of the sweet potato and thought it was even better. Probably just a personal preference, but give it a try. I also calculated "points" for 6 servings: per serving 3 points.

    Excellent soup. I also chose to use an granny smith apple rather than apple sauce and cooked it along with the sweet potatoes. My curry on hand was on the strong side , so I skipped the curry butter and additional nutmeg. Also maybe my sweet potatoes were on the large size because I needed additional chicken broth to make it thinner. Glad I found another way to use sweet potatoes
