    This soup is really good, and no one has mentioned how healthy it is. I ended up making some changes - actually forgot to put in one of the sweet potatoes, but since I thought I had I already added some extra broth and applesauce (smooth, couldn't find unsweetened chunky. Total 2 cans chicken broth and 2 cups applesauce. I ran out of curry powder, so I made a substitute with 1/2 tsp turmeric, 1 tsp ground cumin powder, 1/2 tsp ground coriander powder, and 1/2 tsp. red chili powder. I liked the flavor so much I will use this again instead of regular curry. Did not do the chips or "butter" but did top with cilantro. Really enjoyed the result! I might throw that extra sweet potato in next time though. ROUND TWO: tried the exact same recipe with roasted butternut squash instead of the sweet potato and thought it was even better. Probably just a personal preference, but give it a try. I also calculated "points" for 6 servings: per serving 3 points.

    Excellent soup. I also chose to use an granny smith apple rather than apple sauce and cooked it along with the sweet potatoes. My curry on hand was on the strong side , so I skipped the curry butter and additional nutmeg. Also maybe my sweet potatoes were on the large size because I needed additional chicken broth to make it thinner. Glad I found another way to use sweet potatoes

    The recipe came out great, though I did make some changes right from the get-go....
    I only had regular curry in the cupboard, so I added 1/2 of a Chipolte in Adobe Sauce to the onions, garlic & ginger while they were sauteing. We feel that this gave it a GREAT kick of flavor! I also added a 1/4 tsp. of cumin.
    I couldn't find "chunky" apple sauce, so I added one apple, peeled, cored & chopped to the sweet potatoes while simmering. We were very happy with that addition!
    And after reading the other reviews, I bought an extra sweet potato to have extra chips for the garnish.
    It was sol tasty, we really didn't need the curry butter, but we did it anyway... YUM!
    All and all a great recipe if you are willing to add a little extra love to the recipe:

    This is a delicious soup! It is easy to make and filling with a side of good bread. It gets even better as a left over as the flavors blend together in the fridge. I am making it again for the second time and am looking forward to a spicy, sweet, delicious fall meal.

    The soup ended up being yummy but i thought it lacked a depth of flavor at first. Of course i was planning to skip the curry butter at the end so maybe that's all it would have needed. Instead i added an extra splash of vinegar and a little more salt and it ended up being delicious.

    Pretty delicious soup, but it felt like it was missing something. I changed the recipe slightly, using cinnamon and nutmeg in the butter/vinegar sauce instead of curry. It was delightful, but the soup itself still needs something a little extra - maybe something tart.

    Surprisingly delicious! I was a little skeptical at first but I had 2 bags of frozen, chopped sweet potatoes to use up and figured this was worth a try. Because of my frozen, not fresh, sweet potatoes. I started at the onion step (another cheat: I used ground ginger instead of fresh and dumped the frozen sweet potatoes in with the broth, bringing it to a boil as instructed. I finished the recipe minus the chips and curry butter. It was still yummy without it! Great with cornbread on a cool, fall evening.
