You can create up to five timers

Ingredients

  • Ice cubes
  • 1 to 2 juicy limes (you need 1-ounce juice and a wheel for garnish)
  • 1 ounce golden rum,(recommended: Mount Gay)
  • 6 ounces ginger beer
  • 1/2 ounce dark rum, (recommended: Meyers's)

Directions

Fill a highball glass or large wine goblet with ice cubes. Add the lime juice and the golden rum. Top off with the ginger beer and stir lightly. Float a layer of the dark rum on top by pouring it over the back of a wide, flat spoon. (Don't worry if it doesn't float; it tastes great either way.) Garnish with the lime wheel. Drink.

    One of my favorite drinks ... I've heard of the variation from Bermuda ... but it's also an Australian drink made with Bundaberg Rum and Bundaberg Gingerbeer. Very popular in restaurants over there. Bundaberg Rum is a pretty amazing treat if you can find it :-

    Use Goslings if you want, but there is NO reason to say this drink must be made using a particular brand. Goslings apparently conned a copyright, but it should be invalid. This drink was being made with various rums long before they had the idea to highjack it.

    make these with ginger beer and goslings dark rum, add a slice of rum.
    make them as strong or weak as you like, and they will be a big hit.
