Directions

Puree a can of white beans in a food processor with 1 or 2 leftover peeled roasted sweet potatoes, 1/4 cup olive oil, 1/2 cup grated parmesan, and salt and pepper. Garnish with toasted nuts and serve with crackers.

    kinda boring. I think I made an error in draining the beans - way too dry so had to add chicken stock. I'd add a lot of salt or seasoning blend or something. Edible, but not worth doing again.

    This recipe for the "Day-After Dip", uses Thanksgiving [with the widest variety of leftovers] to use as the foundation for this 'quite-good' appetizer!!! Enjoy!!! :-
