I had seen this recipe many years ago,30 to be exact,before I became a mommie, so when my boys were old enough to eat table food I would make this for them on the week ends. However, I had forgotten what they were called so, I told my boys it was " Sunshine in a Window". They enjoyed them very much, they make them for themselves and their friends 28 & 30 years later, I just made myself one,I added a piece of swiss cheese & ham when I flipped it over and heated it just until the cheese was melted and the ham was warmed DELISH! Makes a great light dinner too!

This is probably the only recipe I remember from my high school home economics class. It's very simple to make and very tasty. And it's unique, so it impresses people you cook it for. Just ensure your hole is the right size (not too big and not too small.

No matter how hard I try, I have never been able to perfect an egg cooked over easy. However, this recipe is a breeze and the combination of the egg and the toast together is so delicious! This would great to make for breakfast for weekend guests as you can make the texture of the egg to order and have sides to serve.

This is a classic tried and true way to cook eggs and toast. We use healthy margarine and whole wheat bread. I break the yolk once it's in the pan and spread it with a knife on the bread; I like the egg to cover the toast as it cooks. We put syrup and powdered sugar on top when they're done. I call this dish lazy french toast.

My Grandmother who was born in 1899 made this for us when I was a child. She called them a "hole in the egg" which of course always seemed wrong to me!
For an adult version that is amazing, I add a little truffle oil to the pan near the end to add the flavor to the toast and then grate fresh parmesan cheese (not the pre-grated stuff on the the top and serve. Good enough for company. YUM!
