Very tasty, but quite a time investment to put together. Do NOT skip salting the eggplant - this makes a big difference in removing the bitterness of the eggplant. Overall, this dish was flavorful and the eggplant was tender, not spongy like I've had at some restaurants. I will definitely make it again but only for special occasions.

Yet another flop. I decided to try a different eggplant recipe. Followed recipe exactly. Still was nasty. My dog wouldn't eat it and he eats everything.
