Way too much lemon. I ended up using 1/2 the lemon zest that the recipe called for and it was still too much. Next time i will probably omit the lemon completely. Other wise a good recipe.

When a finicky 13 year old boy requests "thirds" and then asks you to make the dish again, you know it's a keeper.
This dish is super easy to make and makes WAY more than the recipe states (I was able to get about 24 small servings out of it. I was a little nervous about making lasagna in the summertime for fear that the cheese and noodles would be too heavy, but the dish was, although filling, surprisingly light tasting.
My only real recommendation is that if you use jarred sauce as I did, then there should be no reason to salt the water for the noodles or to add salt to pretty much every element as the recipe suggests.
Also, I used non-fat cottage cheese and it didn't seem to affect the taste at all.

I think it would have been infinitely better if I had just held off a little on the lemon zest and the cayenne, but other than that it's a rock solid recipe.

My husband firmly believes that every dinner should involve meat in some form. He looks at me suspiciously every time I make a vegetarian meal, usually muttering something along the lines of, "Would have been better with ground beef..." But I made this meatless dish anyway, arguing that I needed something good for when our vegetarian friends came over for dinner.
The verdict? He loved this lasagna! He said it was the best vegetarian meal he'd ever had. I thought it was nicely spiced, with the lemon zest adding a great kick, along with the cayenne. I used my own spicy tomato sauce, and overall, the dish was just full of great flavor and cheesy goodness.
I think that deep in his heart, my husband may still hope that I will add meat to the dish next time, but at least I know I have a great vegetarian recipe. My next challenge: to find a great VEGAN recipe for another friend!

The lemon and the goat cheese are a nice compliment to each other. This lasagna is great the next day too!

Maybe my taste buds are from another planet after reading all those positive reviews, but I thought this was gross! Whoever decided that lemon and mozzarella go together was nuts in my book. I mad this and winced with every bite - all I could taste was lemon, and not in a good way! It was bad enough with only 1/2 the lemon zest - the cat wouldn't even touch it :-P. In my opinion the only place lemons & cheese go together is in cheesecake.
However, overall, I feel like there's a lesson in all this - ALWAYS use your own best judgement when dealing with #1red chili flakes, & #2lemon zest!

This is the best lasagna I've ever had. The boyfriend and I loved it so much we made it twice in one week. He liked less lemon zest and I liked more. I found that fat free cottage cheese worked just as well as the regular one. This is a keeper!

i was giving my mom a 70th birthday party and wanted to do something healthy
so i did a different kind of lasagna without meat and it was a first time hit it was easy to make and the kids were able to help make it and they also enjoyed it with the spinach. They have already ask me to make it again.
