This is the best veggie lasagna I have ever tasted. The sweet basil tomato sauce is incredible.

I had never made lasagna before and it was a wonderful experience. The cheese was a nice mix, the spinach was just enough, and the sauce-oh my goodness the sauce was terrific.

There are a few things that I would do differently (more prep than anything, just as you will find out when you make this delicious dish. I will suggest using just a little bit of lemon zest-the zest of a whole lemon was too much, but not unpleasant. I prefer the taste of the sauce and cheese.

Also, it is fairly easy. Be prepared to do a nice load of dishes as this recipe has many components. But, believe you me, it's worth it! Bon appetite!

sooo simple. The hardest part was finding the no boil noodles. Love the lemon. Great touch. Nice no meat option. Even the guys loved it with an antipasta salad.

This was far easier than I thought a lasagna would be. It got good reviews the first night and then rave reviews as we reheated it over the next few days. The structure held up nicely as a leftover. I added ground pork in one layer and it worked well. I've added it to the regular rotation as lunches for the week rather than an entree.

Everyone loved it. I had to broil it for about 3 minutes to add some color to the cheese on top, and I served it with some of the extra sauce. It was my first time making it this way and became an instant hit. I also used more mushrooms and cheese than called for (a little less than 2x as much of each and made more layers.
